I Made Muffins Today!

So none of us know how this Covid-19 thing is going to play out, but we are at home. The question for me became, am I stuck at home or will I make this the best time of my life. For me it's time to #BeAmazing. So I made Blue Berry Muffins from Scratch

After a few weeks of being stuck in the house and watching a year's worth of work on JustMy come crumbling down as Covid-19 shut the world down a little more and more each day.  I decided I was done with trying to live life like it was normal because even before Covid-19 it was not normal for me.  I live with depression and ADHD, not a good combo for a single dad trying to build a tech company.  So before I get into why I made muffins today, let me give you some background details of where I am and where some of you might be too.

Let's Start with the Bad News

Life has been pretty good for me except for 75% of the time that it was bad.  My depression isn't a result of one thing.  It's took a lot to beat me up this bad.  I can share more on that later.  But today I am home alone, honestly not feeling well, and frustrated as heck that me and my best friend built JustMy at what has to be the worst time in history to launch something new.  So what do I do now?

Now this is where you come in, see if you are reading this in April of 2020.  Well you are most likely sitting at home on lockdown like most everyone else in the world.  If you are like me, you were dealing with issues before this started.  This just complicates things a bit more.  See if your health was bad, or you were dealing with financial issues, or family issues, or trauma from childhood.  Well you are still dealing with those, but now you are home without the freedom to move around and people are dying, the economy is crashing, and the world is shut down. So what do I do now?

It's Time to BFREE

The question I have for myself and for you to is this.  What are we going to choose to do right now?  I mean like right now today.  What are you going to do?  Well here is what is influncing my thinking, the #BFREEChallenge and the 12 Week Year.  The #BFREEChallenge is a challenge I am putting together for my friends at BFREE CBD oils.  I fell in love with the name they choose for the company and the lifestyle attitude implied by it.  Then came Covid-19 and I thought I had to put the project on hold.  The 12 Week Year is a book by Brian Moran.  The idea behind the book is simple, Get More Done In 12 Weeks Than Others Will In 12 Months.  No Matter How Busy You Are, Or How Many Times You've Failed In The Past. This New Approach Is Easy To Learn, Easy To Implement, And Easy To Maintain.  

So we all have a little time on our hands, why not take a reset on life?  Why not learn somethings you never took the time to learn before?  Why not start new routines?  Why not stop and say, I've had it with yesterday?  Today I want to BFree!

So today is my day one, I want to accomplish a years worth of task in 12 weeks and BFree of some of the mental burdens that hold me down.  I want to invite you to follow MyProfile here on JustMy, JustMy.Com/TheEvolutionofJR.  I am going to be sharing my 12 week journey with you and I hope you will start your own!

JR the Single Dad Blueberry Muffins

One of my goals is to learn to bake and cook as much as I can instead of buying pre-made items.  So today I learned to make Blueberry Muffins and I have to tell you, the hardest part was not eating the entire pan when they came out of the oven!

Let's Get Started with the ingredients you need!

  • 2 cups self-rising flour
  • 3/4 cup white sugar
  • 1 egg
  • 1 cup of cold milk
  • 1/4 cup olive oil
  • 1 cup of fresh or frozen blueberries
  • 1 cup of shredded sweet coconut

Now for a few Simple Directions

  • Preheat oven to 400 degrees F (205 degrees C).
  • Prep time is about 10 minutes
  • Baking time is about 25 minutes
  • Stir together the flour, and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Next stir in your Blueberries, only do this for a few seconds.  I used a medium 12 cup muffin pan.  Spray your pan with canola oil pan spray and the spoon your batter in evenly.
  • I like have a little texture on top of my muffins, so I sprinkled shredded coconut on top of each and then a dash of sugar.
  • I baked these on the bottom rack of the oven for the first 20 minutes and then moved them to the top rack for the last 5 minutes.  This helps to prevent the bottom from being over cooked and allows the top to get perfectly golden and crisp!

So in closing

I am going to spend the next 12 weeks taking care of myself.  Not watching to much of the Covid-19 news, and learning how to get a years worth of accomplishments into 12 weeks.  I am going to be posting my journey here on MyProfile.  I hope you will join me in taking the #BFREEChallenge!  Let's do this!
